12am Food: Tortillas

Tortillas are amazing. Here are 5 things to do with tortillas other than make delicious burritos:

Tortilla-Strips-640x4191) Tortilla Strips

Spray a tortilla with cooking spray and sprinkle with salt or your favorite seasoning. Cut the tortilla into strips and back at 400 for 8 minutes, flipping them once. Hooray!

tortilla2) Chocolate Peanut Butter Roll

Spread a layer of peanut butter over your tortilla and then add a small handfull of chocolate chips. Microwave for about 40 seconds or until the chocolate is melted. This is also great with banana slices, jam, or strawberries.

Spread some tomato sauce over your tortilla and sprinkle with cheese. Add anything else you have around that you like on pizza. Place on a baking sheet in the over and broil until the cheese is all melted.

pinwheel4) Lunch Wrap Pinwheels

Spread your tortilla with some cream cheese or hummus and then layer with some lunch meat, cheese, and/or lettuce. Roll it up and then slice into 1 inch pinwheels. Bonus Points: Put on a plate with some toothpicks and pretend you’ve made a fancy appetizer.

Tortilla Soup5) Soup Addition

You can add strips of tortillas to pretty much any soup. They make a great crunchy addition when baked like in the first idea, but they can also be added when you’re starting to heat your soup to make it thicker and heartier. If you’re really motivated, here’s a super easy tortilla soup recipe:

  • 1 can of corn, mostly drained
  • 1 can of black beans, drained
  • 1 can of diced tomatos with chilies, drained
  • 2 cans of chicken or vegetable broth
  • 1 cup of diced cooked chicken (optional)
  • Handful of shredded cheddar cheese
  • Tortilla strips

Dump the first 5 ingredients in a pot until heated through. Serve with cheese and tortilla strips on top. Add sour cream, salsa, and avocado slices if you want.
